Delicious garden egg sauce served with white rice

How much do you love garden eggplant,Have you tried these spicy, tasty garden egg sauce before?

In my region, garden egg plant is used to welcome visitors in the absence of food .
Recently I stored some garden for visitors but I decided to remove some and prepare a simple,yet delicious recipe for family lunch.
I have a leftover rice without stew or sauce and my child is about to return from school.

I just have to prepare something quick and tasty,so she can eat when she returns.

Let me walk you through the step by step of how I made this dish



Ingredients needed



  • 7 pieces of garden egg plant
  • 10 pieces of fresh red pepper
  • Half cup of red oil
  • 1 large onion
  • Salt to taste
  • Enough water
    You can add any spice of your choice.

How I prepare it



It is a simple and delicious recipes ,that takes not more than 10 minutes to make.

First of all, I started by washing and slicing my garden egg. I sliced my garden egg into cubes, though it didn't actually matter what shape or size you cut it,because you still have to blend or pound.

I transferred it to a clean pot, poured in few cups of water and allowed it to boil for a minimum of 3 minutes.
This way, the garden egg will soften and I can easily pound or blend .

While the garden egg plant was busy dancing to the tone of the fire, I cease that opportunity to pound my red pepper. I did not pound it to paste but rough.
I love it this way because,even after cooking I can still see the beautiful red colors.

Then I sliced my onions too and set it aside

Now, the garden is ready and soft.
I transferred to a mortar and gave it a rough pound.

Now the ingredients are ready and it's time to prepare my special delicacy

I poured the half cup of red oil into the pot, allowed it for few seconds then add my onions, allowed it to saute.

Then I add my fresh red pepper , allowed a few seconds, then transferred my pounded garden egg plant and stir

I stirred everything together and taste for salt, I added fee more salts and continued stirring.

Now the sauce is ready and it's time to serve, I had an already boiled rice ,so I served my sauce with the white rice .

Results



This is a delicious and spicy sauce with with a slightly smoky flavor from red oil.
This sauce is best paired with boiled yam as it is considered a local sauce but it goes well with rice, plantain and it can be used as dip for bread.

I served with rice because it was available at the moment .
