
When you have fresh coconut and some vegan butter, what recipe comes to your mind.
I was fortunate to meet a man who harvested many coconut from his farmland on my way to get something from a local store near my home.
The man was willing to sell them at a very cheap rate andi was glad that I had extra money with me,
I immediately bought two for myself and hive .

Coconut fried rice was the first recipe that came to my mind when I saw the coconut and hopefully I had some butter in my fridge.
I remember making this dish for my aunt who came visiting with her family about six years ago,
My aunt never believed that I could make such delicious dish until she had her mouth filled with a spoon of this creamy exquisite coconut rice ,
She had to ask my mom if she was sure that I prepared the dish myself and my mom confirmed that I made the dish myself.
She applauded me and asked for another plate.
Coconut rice became my favorite starting that very moment and without hesitation ๐.

Let me quickly list the ingredients that gave me the first applaud in cooking.

1 cup of rice *

1 full fresh coconut *

2 large carrots *

A handful of green peas *

3 tablespoons of vegan butter *

6 piece of fresh pepper *

Duration

The maximum duration consumed in preparation this dish is 35-40 minutes .
And that's because of the process involved in grating the coconut .
Procedure for making this recipe
Step 1

Wash your rice using cold water and transfer to a clean pot,
Add enough water that can cover the rice and allow to boil.
After boiling, transfer to a sieve and wash again using a clean water and set aside

Break the coconut and remove the water.
Grate or blend it .
I had to grate mine because we didn't have power supply and without power supply you can't use my blender.
Grate it and extract the water then set aside.

Slice your veggies.
Slice your carrots,green peas, onions, and pepper and set aside

Pour your coconut extract into a clean pot, add your natural blended spice, add some salt to taste and finally add your rice and fresh pepper.
Allow to boil to tender and till the water is dried, the remove from heat and set aside.

Set another clean pot on fire and allow it to get hot ,
Add some butter and allow it to melt, add your onions, carrot and greanpeas and stir fry for some seconds.
Add the cooked coconut rice and stir fry again till the veggies are well combined with the rice then remove from heat and serve.

This recipe is topnotch and perfect for family happy time dinner,
My husband fell in love with the dish immediately and demanded for more because of the coconut taste.
He's a lover of coconut dishes and he appreciates the addition of veggies in it.

I feel very happy when I make nice, tasty meals for my family and they appreciate me and this dish gave me another applaud which made my day.
