Veganlove: albacha (cassava flakes)

Greetings the great vegans,
Today I present to you a wonderful, delicious and traditional vegan dish,
These dish has existed in my region for a very long time and is loved by almost every one.

Cassava flakes (albacha)

Albacha is a traditional food eaten here in the eastern part of Nigerian made or processed from cassava (botanically called manihot esculenta).

These albacha is a must try by everyone and I assure you , everyone would love it.

Ingredients needed

🌻 half paint of Dried Cassava flakes
🌻One and half cup of red oil
🌻 One medium sized onions
🌻Salt to taste
🌻Hot water
🌻Two tablespoons of pepper (dry or fresh)
🌻Nngo (a traditional ingredients made from palm fruit ashes. It does the same work with potash but it's healthier)



Cooking duration

The cooking duration is about 15to 20 minutes,
The preparation doesn't take much time unless you want to process the cassava into cassava flakes by yourself which is also simple


Procedure

The cassava flakes can be gotten either fresh or dry but in my case I used the dry one because it was available at the time of purchase,
Both the dry and fresh are very good , the only difference is that you soak the dry with hot water for about 5 minutes before use while you use the fresh one direct without soaking.

Soak the dry cassava flakes in a hot water for about 5minutes or till you get your desired texture then transfer to a sieve and set aside

In a clean pot , pour the one and half cup of red oil and add your nngo (traditional ingredients)
Turn it till the oil thickens.
Note: while adding the Ugo, you will notice the sudden change in your red oil, it thickens like Banga oil.

Add your onions, salt, pepper, and stir.
Add any leaf of your choice but I prefer garden egg leaf

Add the soaked cassava flakes (albacha) to your mistake and stir till the oil covers the cassava flakes.
Turn on your cooking gas or electric stove and place the pot on it for about 3mins

Remove from heat and serve,

Garnish with any thing of your choice, in my case I used onions but you can also use garden egg leaf with red pepper.

These wonderful delicious is best enjoyed with our traditional wine called pamy (palm wine)
